Nikki S. Carter established Blessed Beyond Enterprises, Inc., in 2021, a corporation dedicated to providing professional services consultation. It offers a multitude of specialized and administrative services to companies, corporations, agencies, organizations, nonprofits, government, and non-government organizations (NGOs) to assist with resources and services within its various areas of education, skills, and knowledge.
To focus more on her family and businesses, Nikki has postponed obtaining a Doctor of Philosophy in Criminal Justice from Liberty University after completing dissertation phase II in 2023. She obtained her Master of Public Administration degree in 2011 with a concentration in Justice Administration and a Master of Science in Criminal Justice from Troy University in 2013. She earned her Bachelor of Arts in Criminal Justice with a minor in Psychology from the University of South Alabama in 2007. She is a proud graduate of Demopolis High School in her hometown of Demopolis, Alabama.
Nikki’s passion for activism in supporting victims' rights and advancing judicial practices was essential in establishing Champion Initiative, LLC. in 2022. Champion Initiative provides advocacy, non-legal navigational, and educational resources, services, or both to victims of violence, injustice, and discrimination and focuses on education and mental health rights. “Both entities are the substance of God-given gifts and talents to edify God’s kingdom and serve the people while leaving an inheritance for my children—Simeon, Ashlyn, and McKenzie—and their children’s children.”

As Director of Operations for Butter Baked Cake Co., Heather leads the health-focused brand’s direct to consumer success bringing invaluable operational and strategic expertise to the team. With over a decade of experience in organizational consulting for startups and small businesses, Heather specializes in developing scalable administrative infrastructures and streamlining procedures—skills that are crucial for managing the complex operations of a growing company.
Heather's background includes a significant role as VP, Board member, Cofounder, and Director of Philanthropy/Operations at Feeding the Soul Foundation dba O'Side Kitchen Collaborative. In this capacity, she demonstrated her ability to thrive in high-stakes environments, organizing successful fundraising events, securing substantial funding for meal distribution projects, and managing corporate contracts.
Her consistent momentum in strategic planning, fundraising, and operations management equips Heather to drive operational efficiencies and support sustainable growth.
